MUSHROOMS ON TOAST
Farm mushrooms 50gms
Bread slice 1nos
Chopped shallots 10gms
Chopped garlic 10gms
Chopped olives 10gms
Green pepper
chopped 10gms
Tomato concasse 50gms
Salt to taste
Crushed peppercorns 6nos
Mixed dry
herbs a pinch
Dry white
wine 10ml
Sugar a pinch
PREPARATION:
Wash and
dice mushrooms. Heat oil; add shallots, garlic, celery, green pepper. Sauté for
a minute. Add in mushrooms, toss, when they start sweating, add in wine, reduce
for 2minutes. Add in tomato concasse. Reduce for 10minutes. Add salt,
peppercorns, green pepper, herbs, sugar and olives. Cook until the mixture is
almost dry. Place the toast on a half plate. Pile cooked mixture on top. Sprinkle
grated cheese over.
Serve hot as an entrée.
