SOUP - 4

HIGHLY  FLAVORFUL!

THIN FISH HAWAII N SOUP
Fish stock                      400ml
Fish fillet (baas)
Onion                            ½ no
Carrots                          2 inch
Lime juice                     10ml (fresh)
Coriander seeds           1 gm
Fennel seeds                 1 gm
Coconut milk                50ml
Salt                                to taste
GARNISH:
Sliced mushroom         2nos
Red bell pepper            10gms
Coriander leaves          10nos
Coconut slivers             10nos


PREPARATION:
Poach the fish in the stock along with onions, carrots, spices. Remove fish and cut into dices strain the stock. Add in coconut milk. Bring to boil and reduce the liquid till 50% remains. Add in mushrooms and coconut slivers. Boil for a minute. Add salt, juliennes of bell pepper and coriander leaves. Pour into a soup bowl. Serve hot.
