THIN TOMATO & SPINACH SOUP

THIN TOMATO AND SPINACH SOUP
Chopped tomatoes                                            200gms
Veg / chicken stock                                            200ml
Tomato juice                                                       200ml
Salt and pepper                                                  to taste
Cinnamon                                                           1stick
Garlic                                                                   2cloves
Spinach                                                               200gms
Preparation:
In a stock pot, cook together tomatoes and stem of spinach and garlic. When becomes soft, add in stock, tomato juice and cinnamon. Bring to boil and simmer for 30minutes. Strain the liquid, pressing a little. Discard the leftovers. Check seasoning. Place shredded, blanched spinach in a soup and pair in the hot soup. Serve immediately.
