Base: pineapple shell
Body: 75gms juliennes of tofu (bean curd), pineapple,
capsicum, tomatoes, coconut
Dressing: 5ml mayonnaise + 2ml honey +
10drops limejuice + 2ml cream
Garnish: sliced stuffed olive and thin pineapple
slices halved
