SALAD DRESSINGS

COMMONLY USED SALAD DRESSINGS


·       Vinaigrette (French dressing)
3 parts olive oil + 1 part vinegar (malt) + salt + milled pepper + French mustard powder

·       English dressing
1 part of oil + 2 parts vinegar + salt + pepper milled + French mustard powder

·       American dressing
Equal parts of olive oil + vinegar + salt +pepper (milled) + sugar

·       Lemon dressing
5 parts of oil + 1 part of vinegar + salt + milled pepper + mustard powder

·       Acidulated cream
5parts of sour cream + 1 part of lemon juice + salt + pepper + mustard powder

·       Fine herbs dressing
Vinaigrette + finely chopped fresh herbs

·       Tomato dressing
4 parts vinaigrette + 1 part of reduced fresh tomato puree

Mayonnaise
